What We Found In the Cup
Arabica grown at the unexpected edge of India’s coffee map, cultivated across smallhold farms in the Shivalik foothills, often between 800–1,200m. The beans are carefully handpicked and naturally sun-dried in conditions where coffee has rarely been given a stage, resulting in bright, expressive profiles.
The coffees from Project Shivalik are primarily composed of Arabica varietals such as Chandragiri and SLN-9, nurtured in loamy soils with distinct Himalayan microclimates. Harvesting is done selectively, ensuring only ripe cherries are picked, and post-harvest handling emphasizes low-intervention methods to preserve the raw character of the land.

From the Shivalik Hills, A First Spark
At the foothills of the Himalayas, where cedar and pine dominate the slopes, we stumbled upon something unexpected: coffee. Smallholder farmers, often with no lineage in coffee cultivation, had begun nurturing Arabica on these rugged lands. Not with grandeur, but with patience and quiet experimentation.
Project Shivalik is our effort to nurture that spark. To support growers who dared to try something new in a place where coffee was never meant to be, and to carry their harvests to a world beyond these hills. This isn’t just coffee, it’s the beginning of a new origin story for India.
Beyond the Foothills
Project Shivalik isn’t just about pioneering coffee in Himachal Pradesh. It’s about building traceable, high-altitude lots from the Himalayan foothills, where smallholder farmers are growing Arabica in conditions unlike anywhere else in India. Each microlot reflects resilience, experimentation, and the untapped potential of this region.
Every lot is cupped, moisture-checked, and profiled with care before release, ensuring roasters get clarity and consistency. From delicate filter brews to bright espresso expressions, these coffees bring something new to the Indian specialty landscape.
