ABOUT THE ORIGIN
Rayagada sits at the edge of the Eastern Ghats, coffee country that most of India has never heard of. The SL9 here grows slow, at altitude, and the yellow honey process keeps just enough fruit contact to add sweetness without overwhelming the varietal character.
ROASTING TIP
Roast to a light city. Stop 30 to 60 seconds after first crack. This lot rewards a gentle hand. Rushed past medium, the stone fruit collapses and you lose everything that makes it interesting.
